LEMON KISSED CHICKEN
Makes 6 servings of chicken.
3 lemons
1 whole roasting chicken
1 sprig thyme
3 sprigs parsley
2 tbs each chopped thyme, oregano and sage
3 tbs olive oil
HEAT oven to 350 degrees. Zest and juice 1 lemon, quarter remaining lemons. In bowl, whisk together oil, thyme, oregano and sage, 1 tbs lemon juice and 2 tsp lemon zest. Season with salt and pepper, if desired. RUB lemon mixture over chicken and under skin. Place chicken in roasting pan. Sprinkle salt and pepper in cavity, if desired. Place quartered lemons and sprigs of parsley and thyme in chicken cavity, tie legs together with string. ROAST chicken 1 hour 30 min. Or until done, basting with pan juices. Let sit 10 min. Before slicing, THEN SERVE...
